Ceylon Cinnamon — The Gold of Sri Lanka

Sri Lanka is known around the world as the home of true cinnamon. Cinnamomum verum, often referred to as Ceylon cinnamon, is native to the island and considered the highest quality cinnamon available today. Thanks to its delicate aroma, light color and refined flavor, Sri Lanka remains the world’s leading producer and exporter of pure cinnamon.

For centuries, cinnamon has been one of the world’s most treasured spices. In ancient Egypt it was used in sacred rituals and mummification practices, while in medieval Europe it became a luxury ingredient reserved for royal courts and wealthy merchants. During the era of global spice trade, cinnamon was considered so valuable that it rivaled the worth of gold itself.

In Sri Lanka, the harvesting and preparation of cinnamon is still regarded as a traditional craft passed down through generations. The delicate outer bark of the cinnamon tree is carefully processed into the familiar cinnamon quills used as a spice, while other parts of the plant are valued for the production of essential oils and aromatic extracts.

Ceylon Cinnamon vs. Cassia Cinnamon

Although both are commonly called “cinnamon,” Ceylon cinnamon and Cassia cinnamon differ significantly in quality, composition and properties.

Ceylon cinnamon has a lighter color, softer texture and naturally sweet, delicate flavor. Its thin layers form multiple fragile folds that are easy to break apart. Cassia cinnamon, more commonly produced in countries such as China, Vietnam or Indonesia, tends to be darker, harder and stronger in taste.

One of the most important differences lies in their coumarin content. Ceylon cinnamon contains only trace amounts of coumarin, while Cassia cinnamon contains significantly higher levels. Excessive long-term consumption of coumarin may place strain on the liver, which is why Ceylon cinnamon is generally considered the safer option for regular use.
